Many of you have asked me for my recipe for eggplant lasagna, so here it is! with pictures!
4-5 eggplant (enough to make 3 layers)
1 lb ground beef
1 tbsp salt
1 tbsp pepper
1 bottle tomato sauce
1 pack lactose free cheese
olive oil (as needed)
Remove skin of eggplant and cut into circles
Put eggplants in a baking tray and season with salt, pepper and olive oil
Bake in the oven at 350 while preparing the ground beef. Follow the instructions for Ground beef seasoning
Take eggplants out and start assembling lasagna in a casserole dish. careful placing the eggplants to casserole they might break when grabbing.
Layer lasagna like this: first the eggplant, then ground beef, then tomato sauce (store bought is fine), and finally cheese (daiya lactose free cheese). Repeat process until you run out of everything.
Bake lasagna in oven at 350 until your spatula crosses it completely (well that’s what mom did to tell it was done.
